I’m way overdue on this post! Hopefully, it’s deliciousness help you forgive me!
I made this while working at Davidson college, some years ago, when I started writing Playing House. During that time, I had found out that I have a pretty serious case of GERD (acid reflux) and that cooked tomatoes are like, the devil, to my system.
But my love for pasta and red sauce was too much to just give up!
So, I cut the number of tomatoes in a simple marinara sauce with the red peppers. It helps with the acidity. Plus, they are so freaking good! I love red peppers!
There’s a scene in Playing House where Hannah wants to cook Caleb a fancy meal. That’s her way of showing her love and appreciation for someone.
What’s amazing about this recipe is that is super easy and fast! Combine all ingredients and simmer. You can have dinner on the table in 45 mins 🙂
And you make it to your liking. If you like Basil, use a lot. Not a fan of onions? Use a little!
Also, unless you’re not using the blender (see below) you don’t have to be a master with the knife. Onions are the only thing you’d need to cut.
- Sweet Onion
- Jarred Red Peppers (for convenience) or Roast about 5 of your own- Instructions Here by toriavey.com
- Canned Whole Tomatoes- 1 28 oz can will work
- Balsamic Vinegar
- Dried Oregano
- Red Pepper Flakes
- Garlic- 5-6 cloves (you really can’t have too much!)
- Spicy Italian Sausage (Optional)
Heat oil in a pot
Add Garlic, Salt and Pepper (3-4 mins)
Now, this next part, you can do this two ways:
Insert blender into sauce and blend until smooth
VERY CAREFULLY- pour into the blender and take it for a spin. Might want to do it in batches this way.
If you don’t own either of these- no worries! In the beginning of the process, make sure to cut Red Peppers and Tomatoes into small pieces. The sauce will be chunky but still oh so tasty!
